INGREDIENTS:

  • 3 cups flour
  • 1 1/4 cups sugar
  • 1/2 pound butter, preferably Poitou-Charentes
  • 1/2 teaspoon sea salt
  • Eau-de-vie of choice (optional)
  • 1 egg plus 1 yolk

 

INSTRUCTIONS:

  1. Preheat the oven to 350°F.
  2. In a bowl, mix all the ingredients except the yolk. Avoid over-kneading the dough. If using a food processor, pulse the ingredients.
  3. On a sheet of parchment paper, roll out the dough into a single large round. Neaten up the edges. Lift the parchment paper with the dough and transfer it directly onto a baking sheet. Create decorative stripes on the dough using a fork or knife.
  4. In a small bowl, beat the egg yolk with a little water. Apply this wash to the dough using a pastry brush.
  5. Bake the galette for 25–30 minutes, or until it turns golden brown. Remove it from the oven and allow it to cool.
  6. Once cooled, give the galette a sharp whack in the middle. If needed, continue to give further whacks to break it into uneven pieces.
  7. Serve the Sugar Galette and enjoy!
  8. Any uneaten pieces should be stored in a closed cookie tin to retain their crispness.
