INGREDIENTS:

  • 2 onions, finely chopped
  • 6 tablespoons butter
  • 8 chicken thighs, skinned
  • Pepper and salt
  • 3/4 cup dry white wine
  • 1 teaspoon curry powder
  • 2 tablespoons flour
  • 6-8 cups chicken stock
  • 1 cup crème fraiche
  • 1 1/2 cups rice

 

INSTRUCTIONS:

  1. Preheat the oven to 325°F (165°C).
  2. In a large skillet, melt 3 tablespoons of butter and sauté 1 chopped onion until translucent. Add the chicken thighs to the skillet and cook, turning them, until they are browned. Sprinkle the chicken with salt.
  3. Pour in the white wine and turn up the heat to burn off the alcohol. Sprinkle the chicken with curry powder and flour. Slowly add 4 cups of hot chicken stock. Adjust the seasoning as needed. Allow the mixture to simmer for 35 minutes.
  4. Meanwhile, prepare the rice. In an ovenproof casserole, sauté 1 chopped onion in 3 tablespoons of butter. Add the rice and stir to coat the grains. Pour in a ladle of stock and let it boil off for a few moments. Then, add 3 cups of hot chicken stock, cover the casserole, and bake in the oven for about 20 minutes.
  5. Once the chicken is done, stir in the crème fraiche if you are serving it immediately. If not, you can reheat the chicken later with more stock before stirring in the cream.
  6. To serve, place a bed of rice on a serving plate, top it with a chicken thigh, and coat it with the sauce.
