  • 1 Muscovy duck, about 3 pounds

INSTRUCTIONS:

  1. In a heavy casserole, place the duck, celery stalk, leek, carrots, turnips, onion, clove, juniper berries, cinnamon, bouquet garni, red wine, chicken stock, pepper, and salt. Bring the mixture to a boil, then reduce the heat to simmer and cook for 30 minutes.
  2. Preheat the oven to 350°F (175°C).
  3. Remove the duck from the casserole and carve it into serving pieces. Place the pieces in an ovenproof dish and dot them with half of the butter.
  4. Roast the duck in the preheated oven for 1 hour, basting the duck pieces with the cooking juices every 10 minutes.
  5. In a skillet, melt the remaining butter and add the sugar and pitted cherries. Sauté them for 10 minutes. Then, lower the heat to the minimum and simmer for another 10 minutes. Set the skillet aside and rewarm the cherries at serving time.
