You see vendors throughout the city baking it in small, portable wood-fire ovens in their trucks, and selling the freshly made socca in paper cones. An all-day snack, it also serves as appetizer base or is eaten, like bread, with any meal. Part and parcel of Nice restaurants and all eateries, socca is a Nice emblem.
It is made from simple ingredients like chickpea flour, water, and spices, resulting in a crispy and savory pancake-like creation. This recipe serves 4 and is perfect as an appetizer, snack, or even a light meal.

INGREDIENTS:
- 1 cup chickpea flour, sifted
- 1 cup lukewarm water
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cumin
- 1 teaspoon rosemary
- 6 tablespoons olive oil
INSTRUCTIONS:
- Preheat the oven to 450°F.
- Place a skillet in the oven and let it heat up.
- In a bowl, combine the sifted chickpea flour, lukewarm water, salt, black pepper, cumin, and rosemary. Mix until you have a loose batter with a smooth consistency.
- Remove the hot skillet from the oven and add 1-2 tablespoons of olive oil, swirling it around to coat the bottom.
- Pour the batter into the hot skillet, spreading it evenly to cover the entire surface.
- Place the skillet back into the oven and bake the Socca for about 15 minutes, or until it becomes blistery and the edges start to turn golden brown.
- Optional: For a darker and crispier look, broil the Socca under the broiler for an additional minute, keeping a close eye on it to prevent burning.
- Remove the Socca from the oven and drizzle it with a little more olive oil.
- Sprinkle with a pinch of salt for added flavor.
- Cut the Socca into wedges or squares.
