Mushrooms Casserole

INGREDIENTS:

  • 3 pounds sliced mushrooms (shiitake preferably)
  • 1 pound sliced leeks
  • Salt and freshly ground black pepper
  • 1 tbsp. chopped parsley
  • 2 beaten eggs
  • 1 cup of low-fat Greek yogurt
    1/2 cup of shredded cheddar cheese, low-fat
  • 1 pound cubed skinless boneless
  • chicken (or turkey) breasts

 

INSTRUCTIONS:

  1. Heat oven to 375 degrees F. Mix beaten eggs and low-fat yogurt in a separate dish.
  2. In a casserole, place 1 layer of mushrooms, leeks and chicken cubes and season with salt, pepper, and parsley.
  3. Cover with 1/2 of a cup of eggs/yogurt mixture.
  4. Repeat process 2 more times and cover with shredded cheese.
  5. Bake until mushrooms and chicken is tender and crust is golden brown.
