Lemon Chicken Stir Fry

INGREDIENTS:

  • 1 lemon
  • 1/2 cup chicken broth
  • 3 tbsp. fish sauce
  • 2 teaspoons arrowroot flour
  • 1 tbsp. coconut oil
  • 1 pound boneless, skinless chicken breasts, trimmed and cut into 1-inch pieces
  • 10 ounces mushrooms, halved or quartered
  • 2 cups snow peas, stems and strings removed
  • 1 bunch scallions, cut into 1-inch pieces, white and green parts divided
  • 1 tbsp. chopped garlic

 

INSTRUCTIONS:

  1. Grate 1 tsp. lemon zest. Juice the lemon and mix 3 tbsp. of the juice with broth, fish sauce, and arrowroot flour in a small bowl.
  2. Heat oil in a skillet over high heat. Add chicken and cook, stirring occasionally, until just cooked through. Transfer to a plate.
  3. Add mushrooms to the pan and cook until the mushrooms are tender.
  4. Add snow peas, garlic, scallion whites, and the lemon zest. Cook, stirring, for around 30 seconds.
  5. Add the broth mixture to the pan and cook, stirring, for 2 to 3 minutes.
  6. Add scallion greens, cooked chicken, and any accumulated juices. Stir to combine.

 

The dish is now ready to be served.
