INGREDIENTS:

  • 1/4 cup extra-virgin olive oil or avocado oil
  • 4 tsp. ground cumin
  • 2 heads cauliflower, cored and cut into 1 1/2” florets
  • Salt and ground black pepper
  • 1/2 cup tahini
  • 3 cloves garlic, smashed and minced into a paste
  • Juice of 1 lemon

 

INSTRUCTIONS:

  1. Preheat the oven to 425 degrees F.
  2. In a large bowl, combine the olive oil or avocado oil with the ground cumin.
  3. Add the cauliflower florets to the bowl and toss them in the oil and cumin mixture until evenly coated.
  4. Season the cauliflower with salt and ground black pepper to taste.
  5. Spread the cauliflower out on a baking sheet in a single layer.
  6. Roast the cauliflower in the preheated oven for about 25-30 minutes, or until tender and lightly browned, stirring once or twice during cooking.
  7. While the cauliflower is roasting, prepare the tahini sauce. In a small bowl, whisk together the tahini, minced garlic, lemon juice, and water until smooth and well combined. Season with salt to taste.
  8. Once the cauliflower is roasted, remove it from the oven and transfer it to a serving dish.
