INGREDIENTS:

  • 1 cup sliced celery
  • 1 cup chopped carrot
  • 1 cup chopped parsnip (optional)
  • 2 cups chopped onions
  • 2 tbsp. coconut oil
  • 1 whole chicken with skin on
  • Rub paprika, salt and ground black pepper on the chicken skin and inside.
  • Optionally add lemon quarters inside.

 

INSTRUCTIONS:

  1. Put veggies in the slow cooker and place chicken on top.
  2. Cover, and cook on low for 7 to 9 hours.
