Gluten Free French Bread

Enjoy a delicious gluten-free version of French bread with this recipe. Made with a combination of rice flour and tapioca flour, this bread has a light and airy texture that is perfect for sandwiches or as a side to your favorite meals. Follow these steps to create your own gluten-free French bread:


INGREDIENTS:

  • 2 cups white rice flour
  • 1 cup tapioca flour
  • 3 teaspoons xanthan gum
  • 1 1/2 teaspoons salt
  • 2 teaspoons egg substitute (optional)
  • 2 tablespoons sugar
  • 1 1/2 cups lukewarm water
  • 2 tablespoons fast-rise yeast
  • 2 tablespoons melted butter or margarine
  • 3 egg whites, beaten slightly
  • 1 teaspoon vinegar
  • Melted butter for brushing (optional)


INSTRUCTIONS:

  1. In the bowl of a heavy-duty mixer, combine the rice flour, tapioca flour, xanthan gum, salt, and egg substitute (if using). Mix on low speed to blend the dry ingredients.
  2. In a small bowl, dissolve the sugar in lukewarm water and add the yeast. Let it sit until the mixture foams slightly.
  3. Pour the yeast mixture into the dry ingredients and mix until combined.
  4. Add the melted butter, beaten egg whites, and vinegar. Beat on high speed for 3 minutes until the dough is smooth and well mixed.
  5. Spoon the dough onto greased and cornmeal-dusted cookie sheets, shaping it into two long French loaf shapes. Alternatively, you can use special French bread pans.
  6. Slash the top of the loaves diagonally every few inches. If desired, brush the loaves with melted butter.
  7. Cover the dough and let it rise in a warm place until doubled in bulk, which usually takes about 20 to 25 minutes.
  8. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Bake the bread for 40 to 45 minutes or until golden brown.
  9. Once baked, remove the loaves from the pan and let them cool before slicing and serving.
