Osso Bucco & Garlic Stew

Osso buco refers to beef shanks that are cross-cut, exposing the marrow-filled bone in the center. The bone marrow adds richness and flavor to the dish as it slowly cooks. The beef shanks become incredibly tender and moist during the long cooking time, making them a perfect choice for slow cooking. The slow cooker allows for low and slow cooking, resulting in incredibly tender and flavorful meat. The long cooking time breaks down the tough connective tissues in the beef shanks, resulting in melt-in-your-mouth meat that easily falls off the bone.

INGREDIENTS:

  • 10 cloves garlic
  • 2 cups chopped onions
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 tbsp. coconut oil
  • 2 cups beef stock
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 tsp. chopped parsley
  • 4 pounds osso buco (beef shanks)

 

 

INSTRUCTIONS:

  1. Peel and mince the garlic cloves. Chop the onions, carrots, and celery into small, even-sized pieces.
  2. Heat the coconut oil in a skillet over medium heat. Add the minced garlic, chopped onions, carrots, and celery. Sauté for a few minutes until the vegetables start to soften.
  3. Transfer the sautéed vegetables to the slow cooker.
  4. Pour the beef stock over the vegetables in the slow cooker. Season with salt, ground black pepper, and chopped parsley. Stir everything together to combine.
  5. Place the osso buco (beef shanks) on top of the vegetable mixture in the slow cooker, ensuring they are fully submerged in the liquid.
  6. Cover the slow cooker with the lid and set it to cook on low heat.
  7. Allow the osso buco to cook for approximately 8 hours, or until the meat is tender and falls off the bone easily.
  8. Once the cooking time is complete, carefully remove the osso buco from the slow cooker and transfer it to a serving platter.
  9. Serve the tender osso buco with the flavorful vegetables and spoon some of the cooking liquid over the top as a delicious sauce.
  10. Garnish with additional chopped parsley, if desired.
  11. Accompany the osso buco with your choice of side dishes such as mashed potatoes, polenta, or risotto to complete the meal.

 

NOTE:

  1. Serving Suggestions: Once the osso buco is cooked, it can be served on a platter with the flavorful vegetables and spooned with the cooking liquid as a sauce. You can also serve it with a side of mashed potatoes, creamy polenta, or risotto to soak up the delicious broth.
  2. Garnish: Chopped parsley is used as a garnish to add a fresh and vibrant touch to the dish. Feel free to adjust the garnish according to your taste preferences.
