  • 1 sprig dried thyme
  • 2 chopped parsnips
  • 2 tablespoons brown rice
  • 4 cups beef stock
  • Salt (to taste)
  • Ground black pepper (to taste)
  • 1 bouquet garni (thyme, parsley, and bay leaf)
  • 1 bunch chopped parsley
  • 1 bunch chives

 

 

INSTRUCTIONS:

  1. Place the cubed beef meat, chopped onions, chopped carrots, chopped parsnips, and brown rice in the slow cooker.
  2. Add the coconut oil to the slow cooker.
  3. Place the sprig of dried thyme and bouquet garni (thyme, parsley, and bay leaf) in the slow cooker.
  4. Pour the beef stock into the slow cooker, ensuring that all ingredients are submerged.
  5. Season with salt and ground black pepper according to your taste preferences.
  6. Gently stir the ingredients in the slow cooker to combine them.
  7. Cover the slow cooker with its lid and set it to cook on low heat.
  8. Allow the beef stew to cook for approximately 8 hours, allowing the flavors to meld together and the beef to become tender.
  9. Once the cooking time is complete, carefully remove the lid and give the stew a gentle stir.
