INGREDIENTS:

  • 1 teaspoon butter
  • 2 tablespoons chopped green onions
  • 1 cup cooked chicken, shredded
  • 2 tablespoons chopped green chiles
  • 2 ounces Pepper Jack cheese, shredded
  • 4 tablespoons salsa
  • ½ teaspoon lime juice
  • ¼ teaspoon cumin
  • ½ teaspoon chile powder
  • ⅛ teaspoon garlic powder
  • 12 corn tortillas
  • Oil for misting or cooking spray

 

INSTRUCTIONS:

  1. Melt butter in a saucepan over medium heat. Add green onions and sauté a minute or two, until tender.
  2. Remove from heat and stir in the chicken, green chiles, cheese, salsa, lime juice, and seasonings.
  3. Preheat the air fryer to 390°F.
  4. To soften refrigerated tortillas, wrap in damp paper towels and microwave for 30 to 60 seconds, until slightly warmed.
  5. Remove one tortilla at a time, keeping others covered with the damp paper towels. Place a heaping tablespoon of filling into the tortilla, roll up and secure with a toothpick. Spray all sides with oil or cooking spray.
  6. Place taquitos in the air fryer basket, either in a single layer or stacked. To stack, leave plenty of space between taquitos and alternate the direction of the layers, 4 on the bottom lengthwise, then 4 more on top crosswise.
  7. Cook for 4 to 6 minutes or until brown and crispy.
  8. Repeat steps 6 and 7 to cook the remaining taquitos.
  9. Serve hot with guacamole, sour cream, salsa… or all three!
