Sausage Soup Recipe

Winter is here which means it is soup season. Keep yourself warm and cozy with this rich and flavorful sausage soup. It is a perfect treat for a chilly evening. Sausage soup is a one pot recipe and takes about 8 to 10 minutes to prep.
It is easy, flavorful and healthy meal for your dinner. Rich with veggies, noodles, cheese and of course sausages, it is a perfect blend and a complete meal in itself. It is comforting and easy dinner choice for everyone. Loaded with vegetables, Italian seasoning and sausages it is an ultimate comfort food for winters.

Enjoy this nice, cozy, warm bowl of heavenly good and delicious sausage soup.

Preparation time: 10 minutes       Cook time: 25 minutes         Total time: 35 minutes

Ingredients:

  • 1 pound Italian sausage
  • 3 large carrots
  • 1 medium onion
  • 2 ribs celery
  • 1 red bell pepper
  • 2 teaspoons minced garlic
  • 1 ½ teaspoons Italian seasoning
  • 1 ½ teaspoons salt
  • 7 cups low sodium chicken broth
  • 1 ½ cups small pasta (dry)
  • 1 cup fresh, chopped spinach

Instructions:

  •  In a large pot, add crumbled Italian sausage, diced carrots, diced onion, sliced celery and chopped bell pepper. Cook for 5 minutes while stirring or cook until sausage is browned and onions are translucent.
  • Stir in Italian seasoning, minced garlic and salt and cook for about 1 minute.
  • Now stir in chicken broth. Bring to a simmer then reduce heat to medium. Cover the pot and cook for 10 minutes or until vegetables are nearly tender.
  • Stir in pasta and cook. Stirring often and cook until pasta is cooked to desired doneness. It takes about 10 minutes.
  • Stir in fresh spinach. Sprinkle with Parmesan. Your sausage soup is ready. Serve in a bowl and enjoy the warm sips of heaven.

 

Note: You can make his soup ahead of time and refrigerate it covered. Reheat on stovetop while stirring occasionally.
