INGREDIENTS:

  • 1 cup (184 g) dry kamut
  • 1 cup (104 g) minced cucumber
  • 3/4 cup (112 g) minced bell pepper
  • 1/4 cup plus 2 tablespoons (60 g) minced scallions
  • 20 cherry tomatoes, quartered
  • 1/4 cup (16 g) minced fresh parsley
  • 2 tablespoons (8 g) minced fresh basil
  • 1 tablespoon (4 g) minced fresh mint (optional)
  • 1/4 cup (60 ml) fresh lemon juice
  • 2 tablespoons (30 ml) olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

 

INSTRUCTIONS:

  1. Prepare the kamut according to the package directions. Once cooked, drain the kamut and rinse it under cold water. Transfer the kamut to a medium-size bowl.
  2. Add the minced cucumber, minced bell pepper, minced scallions, quartered cherry tomatoes, minced fresh parsley, minced fresh basil, and optional minced fresh mint to the bowl with the kamut. Stir all the ingredients together to combine.
  3. In a small bowl, whisk together the fresh lemon juice, olive oil, and minced garlic to create the dressing.
  4. Pour the dressing over the kamut and vegetable mixture, ensuring it’s evenly distributed. Season the salad with salt and pepper to taste.
  5. Cover the bowl and refrigerate the Kamut-bouli for 30 minutes to allow the flavors to meld together.
