INGREDIENTS:

  • 6 slices bacon, chopped
  • 1 pound Brussels sprouts, trimmed and sliced thin
  • Salt and pepper
  • 1 cup heavy cream
  • 4 ounces blue cheese, crumbled (1 cup)
  • 1 pound rotini
  • ¼ cup pine nuts toasted

 

PREPARATIONS:

  1. Cook the bacon in a 12-inch skillet over medium-high heat until crisp. Transfer the bacon to a paper towel-lined plate.
  2. Pour off all but 2 tablespoons of the bacon fat in the skillet. Add the sliced Brussels sprouts, ½ teaspoon of salt, and ¼ teaspoon of pepper. Cook over medium-high heat until the Brussels sprouts begin to soften, approximately 5 minutes.
  3. Stir in the heavy cream, cover the skillet, and simmer until the Brussels sprouts are tender, about 3 minutes.
  4. Remove the skillet from heat and stir in the crumbled blue cheese.
  5. Meanwhile, bring 4 quarts of water to a boil in a large pot. Add the rotini and 1 tablespoon of salt. Cook the pasta, stirring often, until it is al dente.
  6. Reserve ½ cup of the cooking water, then drain the pasta and return it to the pot.
  7. Add the Brussels sprouts mixture and the bacon to the pot with the pasta. Toss gently to combine.
  8. Season the dish with salt and pepper to taste. If needed, gradually add the reserved cooking water to adjust the consistency of the sauce.
  9. Sprinkle each individual portion with toasted pine nuts before serving.
